Why I Love This Recipe
This simple pudding is one of my go-to options when I need something gentle, filling, and inflammation-friendly. It’s perfect for busy mornings or a light dessert.
Ingredients
- 1 cup unsweetened almond milk
- 3 tablespoons chia seeds
- 1 tablespoon pure maple syrup or honey
- 1 teaspoon vanilla extract
Instructions
- Pour almond milk into a bowl or mason jar.
- Add chia seeds, maple syrup, and vanilla.
- Stir well for about 30 seconds.
- Let sit for 5 minutes, then stir again to prevent clumping.
- Cover and refrigerate overnight (or at least 4 hours).
- Stir before serving. Add berries or nuts if desired.
Storage
Refrigerate up to 4 days.
