Ingredients
- 2 cups diced sweet potatoes
- 1 tbsp olive oil
- Salt, pepper
- 2 eggs
- 1 avocado, sliced
Instructions
- Toss sweet potatoes with olive oil, salt, and pepper.
- Roast at 400°F for 20 minutes.
- Cook eggs to preference.
- Divide sweet potatoes into bowls and top with egg and avocado.
