Egg & Veggie Muffins

Servings: 6 muffins

Ingredients

  • 6 eggs
  • ½ cup chopped spinach
  • ½ cup diced bell peppers
  • ¼ cup shredded cheese (optional)
  • Salt & pepper

Instructions

  1. Preheat oven to 375°F.
  2. Whisk eggs with salt and pepper.
  3. Stir in vegetables and cheese.
  4. Pour into greased muffin tin.
  5. Bake 18–20 minutes. Cool before removing.
