Ingredients

  • 2 cups diced sweet potatoes
  • 1 tbsp olive oil
  • Salt, pepper
  • 2 eggs
  • 1 avocado, sliced

Instructions

  1. Toss sweet potatoes with olive oil, salt, and pepper.
  2. Roast at 400°F for 20 minutes.
  3. Cook eggs to preference.
  4. Divide sweet potatoes into bowls and top with egg and avocado.
