🥬 Raw Anti-Inflammatory Green Healing Salad

Ingredients

  • 2 cups chopped kale (massaged)
  • 1 cup spinach
  • ½ cucumber, sliced
  • ½ avocado, diced
  • 2 tbsp pumpkin seeds

Dressing

  • Juice of 1 lemon
  • 1 tbsp olive oil
  • ½ tsp turmeric
  • Pinch black pepper
  • Sea salt to taste

Instructions

  1. Massage kale with olive oil and lemon for 1–2 minutes until tender.
  2. Add spinach, cucumber, and avocado.
  3. Whisk dressing ingredients and drizzle over salad.
  4. Top with pumpkin seeds and serve fresh.
