🥬 Raw Anti-Inflammatory Green Healing Salad
Ingredients
- 2 cups chopped kale (massaged)
- 1 cup spinach
- ½ cucumber, sliced
- ½ avocado, diced
- 2 tbsp pumpkin seeds
Dressing
- Juice of 1 lemon
- 1 tbsp olive oil
- ½ tsp turmeric
- Pinch black pepper
- Sea salt to taste
Instructions
- Massage kale with olive oil and lemon for 1–2 minutes until tender.
- Add spinach, cucumber, and avocado.
- Whisk dressing ingredients and drizzle over salad.
- Top with pumpkin seeds and serve fresh.
